Hatch chiles are grown only in the Hatch Valley of Southern New Mexico, along a 40 mile stretch of the Rio Grande Valley on the banks of the Rio Grande River. Only in this location will you find the right combination of high altitude, intense sun and mineral rich soil. The soil is loaded with nutrients deposited by centuries of flooding and contains specific anti-oxidants not found anywhere else. This gives the chiles heavy walls and a robust flavor. Plus, extreme contrasts between hot daytime temperatures and the cool desert nights force the chile to mature slowly, locking in complex, bright flavors without losing their signature heat.
